And if you have tried the previous ice cream recipes we have shared with you, then you must already know that these ice cream recipes require only two ingredients. And today’s ice cream is not different; you only need pineapple and coconut milk.

Customize your pineapple coconut milk ice cream with just a few tweaks:

  1. Add one medium banana to 2 cups of sliced pineapple and ½ cup coconut milk. Blend the ingredients well together for a delicious twist to your ice cream.
  2. Blend together 1 pound frozen pineapple chunks, ½ cup unsweetened pineapple juice, ½ cup unsweetened coconut milk, 1 tablespoon fresh lemon juice, and 1 tablespoon granulated sugar for a delicious pineapple whip.
  3. Combine one fresh pineapple (frozen overnight), 1 cup almond milk, and 1 tablespoon honey, and blend them together. Transfer to a bowl for immediate consumption, or freeze in a container and enjoy later!
  4. Combine one pineapple (chopped and frozen), 2 tablespoons maple syrup, and a dash of salt in a blender. Blend until you get a smooth and creamy mixture. Taste and adjust the sweetness or seasoning. Enjoy it soft, or freeze for an hour to firm it up.
  5. Throw 1 cup full-fat canned coconut milk, 1 tablespoon coconut oil, and ½ cup chopped and pitted dates into a blender, and blend for 30 seconds. Once you get a smooth mixture, scrape the sides and add 4 cups of frozen chopped pineapple. Blend again for 30 seconds. Serve immediately like frozen yogurt or freeze for 2 hours to harden it up.

Tips:

  1. This pineapple coconut milk ice cream is paleo, vegan, dairy-free, gluten-free, refined sugar-free, plant-based, and allergy friendly.
  2. If you want a sweeter flavor, then you may add maple syrup or raw honey as per your preference.
  3. You may add in vanilla extract for a slightly different flavor.
  4. You may add roasted nuts or small chunks of pineapple to provide some texture to your ice cream.
  5. One medium-sized pineapple contains more than 700% of the recommended daily intake of vitamin C. How incredible is that?
  6. To enhance the creaminess of this ice cream, add one 13.5-ounce can of full-fat coconut milk.
  7. Pineapples are rich in bromelain, protein, carbohydrates, sugar, soluble and insoluble dietary fibers, vitamins A and C, beta-carotene, thiamine, vitamins B5 and B6, and folate. They are also abundant in minerals such as potassium, copper, manganese, calcium, sodium, and magnesium. It is indeed a very healthy ingredient!
  8. To freeze pineapples, peel, core, and cut the pineapple into chunks. Place a wax paper on a cookie sheet, and arrange the pineapples in a row on the sheet. Freeze the pineapples for about 24 hours. Remove the tray, and transfer the pineapples to a freezer-safe bag or container.
  9. For an even healthier touch to your ice cream, use homemade coconut milk. Homemade coconut milk can be obtained from either fresh coconut or dried coconut.
  10. A good skill to acquire is that of effectively and efficiently cutting and serving pineapple without creating a mess.
