Think beaches, think sunsets, think of a vacation on an island. Think pineapple and coconut! Yes, you guessed it right! Today, we will be making a bowl of sinfully delicious pineapple coconut milk ice cream. Pineapple coconut milk ice cream is ridiculously creamy and delicious, and it tastes just like your favorite piña colada, but in a bowl!

The best part about homemade ice cream is the relatively few ingredients you need. And if you have tried the previous ice cream recipes we have shared with you, then you must already know that these ice cream recipes require only two ingredients. And today’s ice cream is not different; you only need pineapple and coconut milk.

Pineapples are super delicious tropical fruits; they are known for their unique taste and substantial health benefits. Pineapples boost the immune system, maintain respiratory health, aid in digestion, and strengthen the bones. They also reduce inflammation, alleviate the symptoms of cough and colds, and even help with weight loss.

Coconut milk, on the other hand, has a creamy texture and slightly sweet taste. It has gotten a bad rep for some time that it is bad for the health. It is actually not! Coconut milk is in fact considered a “miracle liquid” because its nutrient content helps build the body’s immune defenses and prevent diseases. It helps lower cholesterol levels, improves blood pressure, and reduce the risks of heart attack and stroke.

So, how can you make this delish frozen treat to beat the heat this summer? We’ll show you the way. But before making this ice cream, always taste the pineapple and ensure that it is sweet. It is even better that you use overripe pineapple.
